All You Need to Know About Dom Perignon
Dom Perignon is a champagne at the top end of its field produced by Moet Chandon. This is the cream of the crop in its field. It is considered by many to be the best champagne money can buy and this is reflected in its price.
Dom Perignon is derived from a Benedictine monk who made great advances in the improvement in quality of champagne, but contrary to popular belief, did not invent the champagne production method.
The first vintage of Dom Perignon was 1921 and was only released for sale in 1936. With Dom Perignon being a vintage champagne it is only produced during the best growing years. There is no guarantee that will be produced every year and quite often there will be a number of years that pass before the grapes are of good enough quality to use for a production run. Because it is a vintage champagne, it is required that all grapes used in the production be from the same season.
The quality and care is apparent when compared to other champagnes that are produced yearly, these use grapes from a number of seasons regardless of growing conditions. It is for this reason why Dom Perignon is a champagne held in such high regard.
On average about 5 million bottles of Dom Perignon are produced with each vintage. The champagne usually consists of 55% Chardonnay and 45% Pinot Noir. As we roll into 2009, the latest release of Dom Perignon is still dated back to 2000, while Perignon Rose is from a 1998 vintage.
All vintages are required to age for at least 12 months before they attain the silky feel that Dom Perignon is well known for.
The man at the helm of production is currently Richard Geoffroy, who was appointed to as winemaker in 1998.
